Croquetas Deluxe

Back in October 2012 I discovered the amazing food blog ( of the great Spanish actor Juan Echanove, he is not just a great actor, as comfortable in film, tv or theatre but also a great cook.
On this particular entry he cooks “huevos villeroy” basically poached eggs covered in bechamel and then coated with flour, egg and breadcrumbs before frying.

I poached the eggs in the morning and put them in the fridge so they have time to cool completely and easier to handle. You can also do this step the night before.


My children absolutely love jamón croquetas and who doesn’t like eggs and ham. I added some lovely crispy baked ham to the bechamel*, that has to be of a lighter consistency to be able to cover the eggs before coating them with flour, egg and milk and frying gently in a deep frying pan.


They were a real success!!!


*I am not very good with measurements in some of my cooking and tend to just throw it all together, particularly croquetas/bechamel is something I just do without!
