Going on holiday somewhere warm in the middle of winter is a total dream. A dream turned into a nightmare with the thought of wearing a bikini. The being pale, ghostly like I am, I can cope just fine but wearing that dreaded two piece of equipment is another matter.
So with less that two weeks to go the big panic is here and food has to be MEGA healthy, EXTRA slimming and of course SUPER tasty.
Starting with a raw tomato salsa for 2 people:
250g ripe tomatoes, peeled, deseeded and chopped
1 tbsp extra-virgin olive oil
1 small red onion, finely chopped
Juice of 1/4 lemon
Salt, pepper and oregano to season
A salsa perfect to be served with grilled turkey and/or prawns on top of lettuce leaves with some homemade guacamole or you can roll it up on iceberg lettuce leaves and eat it like a wrap.
Healthy food can be tasty too!!!
