Crema Catalana or Crème Brûlée

Like I have said before I don’t really have a sweet tooth and desserts or puddings are never my priority when it comes to cooking. However occasionally I may indulge and have a shop bought caramel or Crème brûlée.
I did play with the idea of making it a bit healthier by using lighter ingredients but to be honest I am only eating 1 and I want to enjoy 100% of its naughtiness.


I did however use top quality ingredients and replace the cream for lovely thick Gold Top milk.

You will need:
2 cups of milk
4 egg yolks
1 cup of sugar, reserve 1/4 for the end
1 cinnamon stick
Zest of 1 lemon
1 Tbsp corn flour

Mix 3/4 of the sugar with the egg yolk and beat until creamy, add the milk and heat gently. Add the cinnamon stick and lemon zest and 1 tbsp corn flour and keep stirring until it thickens enough.
Pour the mix into 4/6 small ramekins and refrigerate for a minimum of 3 hours to set.

Once they are set all you need to do is top the dishes with sugar and either use a torch to caramelised it or if like me, you don’t have one place them under a hot grill till ready.
Result, a lovely, creamy, lemony dessert that everybody enjoyed!!


TIP! If you find the mixture is not setting in the fridge, put it in the oven, medium heat for about 20 minutes before cooling and refrigerating till ready to use!
