Rioja Style

A quick, easy and so warming dish perfect for this cold weather. “Patatas con chorizo” or “patatas a la riojana” is a very popular Spanish dish. Cooked in many ways, some people add other meats or some green/red pepper but I like to keep it simple.

Serves 4
6 medium potatoes
1 onion
4 cloves garlic
2 ñoras
1/2 chorizo
2 bay leaves
1tsp Sweet Pimentón (paprika)

Soak the ñoras 15 minutes in boiling water, meanwhile put some olive oil in a pan and add the chorizo, onion and garlic. Fry to get the chorizo sweating a bit

Add the soaked ñoras meat, potatoes and bay leaves, cover with water and season.
Once cooked, should take no more than 1/2 hour, when some of the potatoes start breaking a bit.

Fry the pimentón in some olive oil and add to the pan

Serve in a large bowl with warm crusty bread 😋
