Savoury protein rich cupcakes

If you had a read through my previous recipe you may see I had only used 3/4 of the minced turkey pack. And this is the reason…

A high protein, savoury cupcake, perfect for lunch or as a snack pre or post workouts.

Ingredients you need:

1/4 pack minced turkey breast
4 spring onions
Large handful spinach
1/2 orange or red pepper


Mix with:
2 eggs
2 tbsp cottage cheese
1tsp garam masala
1 tbsp parsley

Arrange 8 back bacon rashes in a muffin tin to hold the mixture. Bake them for 10 minutes.

Add the mixture to the bacon cases and sprinkle with Parmesan cheese before returning to the oven for 20 minutes

Eat with a fresh cucumber and sweet corn salad or on its own
