Chicken legs are a perfect pick me up and eat me now food.
Throw them in a pan with some veggies and spices and get 2 meals in 1
Any vegetables you do have lying around will do. I used fennel, carrots, onions, mustard seeds, pink peppercorns, bayleaf and cardamon.
Add water and boil gently for 1 to 2 hours.
Sieve the stock to separate the chicken legs from the other ingredients.
Add the chicken legs to a pan with olive oil and a bit of butter and cook till golden
If you have used fennel braise it along the chicken and top with parmesan cheese. So tasty!!!!
And a lovely chicken stock ready for tomorrow.
