Well OK, I confess I am not a big lover of Valentine’s day. I get the love and showing affection should be day to day. But what the hell, I love a good Valentine baking session.
Today I made some “duffins” (a donut/muffin) crazy combination that along with the “cronuts” (a croissant/donut) that has taking baking to a new level.
180g unsalted butter, melted
150g natural yogurt
300g self-raising flour
275g caster sugar
A jar of good quality jam or make your own
After mixing all the ingredients together, but the jam. Fill each hole 2/3, add jam and cover with more batter mix. Bake for 15/20 minutes or less time if doing mini duffins and serve covered with extra sugar.
