Serrano, Manchego and Piquillo Empanadillas! ☺️

My sons favourite empanadilla filling is tuna. But since I am a bit of a “I need to try something new” person I wanted to experiment.

You could make your own pastry but I bought some short crush pastry ready made so I just had to roll it and get the filling going.

Just chop,
100g Serrano ham
50g Manchego cheese
2 Piquillo peppers
And mix all this with 2 tbsp sour cream, 1/2 tbsp pimentón and a pinch of cayenne pepper

Roll the pastry and cut some medium size circles, put a tsp of the mix and seal with some egg yolk.

Used a fork to seal the borders before brushing with remaining egg yolk and baking till golden
