Super quick lunch after a fridge raid
Fry some onion and garlic gently in a bit of olive oil
Add chopped tomatoes and a few cherry tomatoes cut in half and some strips of cooked Piquillo peppers. Sprinkle with sea salt, black pepper and oregano.
Break and egg in the middle of the pan and cook slowly on the hob
Place under the grill if you prefer to finish
You can add some iberico ham, chorizo and serve it with toasted bread! 😋>
