A bit short of time so a very quick recipe idea to cook sea bass a tasty different way.
In a pestle and mortar make a paste with lime leaves, lemongrass, garlic, fresh coriander stalks, ginger, chilli, lime zest and juice, soy sauce and olive oil.
Score the skin of the sea bass fillets, place on a large piece of foil in a baking tray and pour the lemongrass marinade all over and close the foil making a parcel. Leave for 1 hour before baking for 15/20 minutes, depending on the size of the fillets.
I served the sea bass with fragrant basmati rice, flavoured with fresh coriander. The flavours of the marinade together with the fresh tasting fish goes wonderfully with the rice. Unless you are a fuzzy 13 year old that all you can taste is the coriander from the rice 😌
