Baking Love

Cherry shortbread cookies, cut with a heart shape and “viva el amor”
Very easy to make and very easy to eat too, so perfect for some “love” handles. 😂 I will stop now!!

You will need:
100g icing sugar, plus extra for dusting
200g plain flour, plus extra for dusting
50g cornflour
50g ground almonds
250g pack cold vegan butter, cut into cubes
50g glacé cherries, finely chopped
½ tsp almond extract
8 tbsp cherry jam, sieved

Mix all the ingredients together but the jam, roll and cut the shape you like.

Bake cookies for about 8/10minutes, make an indentation with a bottle top or your thumb for a different look, add the sieved jam and bake for an extra 2 minutes. Cool in a rack and sprinkle with icing sugar.

Although the recipe I followed claims you will make 14/16 depending on size I have ended up with a few more, even a broken heart or two

So to stop us eating them all we are going to make a few people happy tomorrow
