Aubergine Parmigiana Rolls

Only 5 ingredients needed for this quick easy lunch and if like me you are the only one that likes aubergine at home it makes a simple meal for one.

Or you could make more and serve it at a party!

You need aubergines, vegan mozzarella cheese, vegan parmesan cheese, fresh basil and tomato sauce (I used homemade but you could use a shop bought jar)

Cut the aubergine in slices length way and mark them on a very hot griddle pan.

Place marked slices on a lined oven tray and top with the tomato sauce

Add the crumbled mozzarella, parmesan and torn basil leaves

Roll the slices loosely after a sprinkle of salt, pepper and olive oil and secure them with cocktail sticks

Bake on a preheated oven for 15/20 minutes and serve
