When I find a giant butternut squash on my organic vegetable box I do get a bit worried. I don’t like wasting food and my kids are not big fans of it. The best and simplest way to cook it is roasting it and making soup by blending it with some vegetable stock.
You can serve the soup in a bowl topped up with crispy breadcrumbs and cayenne pepper and warm wholemeal rolls for a warming lunch
Or a bit more fancy, served in shot glasses with the butternut skin baked until crispy
