The start of soup Season – Looking at the bright side of the cold months ahead!

SWEET POTATO AND RED PEPPER SOUP

It feels like autumn is well under way, although the last couple of days the sun has made things quite pleasant around here.

I love soup, preferably if it is homemade and today straight home from the gym and in less that 20 minutes I had my lovely lunch ready.

I had to improvise a bit as I didn’t have any onions but the end result was lovely.

You need:
1 onion (chopped) I used spring onions and celery 😊
2 cloves of garlic (grated)
3 medium sweet potatoes (grated)
1 red pepper (chopped)
Coconut oil
Coriander seeds (ground)
Coconut milk
Vegetable stock
Chilli (optional)

Heat a tablespoon of coconut oil and gently fry the onion before adding the coriander and garlic. When soft but not coloured add the sweet potato and red pepper, mix well and cover with the veg stock. Once the potatoes are soft add 1/2 can coconut milk and blend. I use a Vitamix but a hand held blender will work well too.

After blending check season to taste and serve.

For a bit of extra kick sprinkle some cayenne pepper with chopped chives and a drizzled of olive oil
